Sweet Potato Brownies

We’re all about getting as many veggies into our diet as possible, which is why we love experimenting with ‘unconventional’ ways of eating them! Veggies never have to be boring, and there are so many ways to cook them – including in desserts! Like their name suggests, sweet potatoes are sweet in flavour, making them a great ingredient to use in healthy treats! They are also a good source of carbohydrates and are rich in vitamin C. Roast them, steam them, mash them – you can even make them into chips! Or, if your sweet tooth is craving a yummy (but healthy) treat, whip up these chocolaty sweet potato brownies!

Ingredients:

1 small sweet potato

½ cup almond butter

¼ cup cacao powder

¼ cup water

2 tbsp rice malt syrup

2 tsp vanilla essence

½ tsp salt

 

Method

Preheat the oven for 180 degrees.

 

Peel and chop the sweet potato into chunks and boil until soft.

 

Remove sweet potato from the water and mash in a mixing bowl until smooth.

 

In a saucepan, melt the almond butter and rice malt syrup together on a low heat

Add the almond butter mixture to the mixing bowl with the sweet potato and add the remaining ingredients. Mix until smooth.

Pour the mixture into a greased tin and bake for 25 minutes.

 

Allow to cool completely before removing from the tin, then slice into preferred brownie sizes!
